About Koshō

Koshō is a multi-dimensional Japanese word. While it literally translates to “pepper,” koshō also holds a rich history as the name for a samurai’s attendant. With food of layered flavors, drinks that will cut into your memory, and a team of samurai-spirited people who are as humble as they are fierce, koshō by Tabu has set out to bring Nashville an experience as dynamic as our name.

koshō was born out of an idea to bring a fun, energetic Japanese style Izakaya that would serve small plates, Shabu Shabu, and elevated cocktails into the heart of Nashville. Operating Partner, Nick Aguilar, could think of no better place than Nashville to make this dream a reality.

Joining forces with long term mentor and restaurateur, Jeff Chon of California, Nick recognized that he had plenty of talent and insight at his disposal to successfully operate his own concept in Tennessee. By experimenting with new Japanese cooking techniques and prioritizing an experience of high-level hospitality, koshō has since grown from its California roots to flourish in Music City.

THE TEAM

Jeff Chon

California based restaurateur Jeff Chon comes from a lifetime of hospitality in the food service industry. Pioneering brands such as Tabu Shabu, Oak & Coal, The Wayfarer, The Alley Newport Beach, Love & Puree - his dedication to the trade is unwavering. Nick Aguilar

Executive Chef Partner

Nick & Jeff met back in 2014, when Nick began working at a Tabu Shabu location. After years of dedication to the restaurants, Nick began his journey into the deeper operations of a restaurant assisting with the opening of Oak & Coal, Costa Mesa with Jeff in 2017. After many years of success and development, Nick decided it was time to relocate to Nashville Tennessee. After much collaboration they decided to bring the quality and hospitality that they curated together in California, into Nashville. So in early 2024, construction began for koshō in Music City!

Karson Speth

Hospitality Manager

Karson entered the hospitality industry as a server assistant at Oak & Coal in 2021. Before she moved from California to Tennessee in 2022, her parting words to Jeff and Nick were, “Let me know when you’re ready to open a new spot in Nashville.” The time has come with the launch of koshō by Tabu! Working her way from a busser to managerial roles in restaurants not only cultivated Karson’s passion for serving customers, but a respect for every position within the industry and a mission to intentionally care for employees. Karson is excited for the opportunity to invest in the Front of House Team and lead them in caring for the people of Nashville.
