February 13th, 2025 | Nashville, Tennessee – California restauranteur Jeff Chon & Nashville local executive chef & operating partner Nick Aguilar are slated to open a new Japanese izakaya and shabu shabu bar in the Sentral building in the SOBRO neighborhood of Downtown Nashville.
Restauranteur Jeff Chon is noted as the founder for popular California based shabu shabu chain, Tabu Shabu as well as Oak & Coal, The Wayfarer and The Alley Newport Beach. His protege, Nick Aguilar, has ventured to begin his own restaurant journey in Music City bringing years of kitchen experience and hospitality with him.
Joined by CDC JD Morgan, Hospitality Manager Karson Speth, and Mixologist Will Ball – the team hopes to bring life to the Nashville dining circuit with Japanese izakaya and yakitori, a full service shabu shabu bar and curated craft cocktail menu all where Japanese cooking meets a fun, vibrant ambiance.
